Hi Bryan. I don't know about installing the latest JDK, I would just download CF 7.0.2 and let it install in the default locations. When starting out, keep things vanilla so that you minimize as many variables that could cause you grief.
On the Flex side of things, download the trial version of Flex Builder 2, make a hello world app, and have it publish it into your web dir (c:\inetpub\wwwroot\ for example). And away you go!
