I am just learning flex as well. I don't have this app posted anywhere public but was just messing around with it on my development server. You can download the files and check them out. Basically I have a flex app that displays a login screen which posts the username/password to a cfc. If the login is ok it then changes the view to a data management page for the users with complete CRUD functionality. I don't know if this is as secure as you need but at least its a start.
