All your projects are safe. If you haven't create any workbench by your own, all your project lies under mydocuments/Flex Builder 3 folder.
just figure out what you did last time. If you can't see the flex navigation, follow what Neeraj has suggested. If navigator is there you might have accidentally delete you project view, you can anytime import them. Think if you have mistakenly switch your workspace. In that case you can either switch to your old workspace or you can import your projects in new workspace. You will find all relevant links under file menu. Just play around the builder and you might managed to get all your projects back :) In case still face any issue, let us know..
