Yep, a custom cell renderer (it can simply be a Label).  You could give it the same style as your column’s headerStyle.

How do I change the appearance of a datagridcell to look exactly
like the header cell? I realize this will not have the functionality
of the header cell such as sorting etc., just the look and feel.

Do I have to write a new cell renderer?
