Charts are simply renderings of a data model that is provided
in a data provider - this is covered very extensively in the
charting documentation.

There is also a good number of examples of how to populate
data models/data providers using server-side Java (you can 
expose a CFC as a Java class), or from Web Service Calls (you 
can expose a CFC as a Web Service) or from HTTPService calls.
Again, there are lots of examples in the docs.

Plug the 2 bits of thinking together, and yes, you can
populate charts from dynamic server-generated data; that's
really the entire point.

There are lots of examples in there as to how to fetch
data into data providers.  And in the book, "Developing
Rich Clients with Macromedia Flex" we show in the final
sample application, the population of charts using J2EE
and MySQL.

So .... yes it can be done.
