I don't know much about eclipse so I have no idea if there is a good way to do this. I'm pretty sure this is not the answer you would like, but one way to do this would be with virtualization. If you are running a Windows box, you can use Microsoft's free virtualPC program.
I'm not sure whether you would run into problems with trying to use the same license for multiple copies this way. In theory, it should be okay since they are all on the same machine, but since each virtual PC instance appears to be its own machine, the license enforcement mechanism might object.
