Just for the records I managed it in the following way:

<mx:FormItem label="Birthday">
        <mx:DateField id="persBirthday" dateFormatter="formatDate2" />
</mx:FormItem>          

[2]
<mx:DateFormatter id="dateformatter" formatString="DD.MM.YYYY"/>

[3]
function formatDate2(date:Date):String {
        return dateformatter.format(date);
}


Even if it seems to be trivial now, maybe some one else can find a 
solution for this topic in the archive
