if you setup your services config to point to a specific server like this:

<endpoint url="rtmp://www.servername.com:2038"
class="flex.messaging.endpoints.RTMPEndpoint"/>
then change it to
<endpoint url="rtmp://{server.name}:2038"
class="flex.messaging.endpoints.RTMPEndpoint"/>

so for example my amf channel endpoint is defined as this
  <channel-definition id="my-amf" class="mx.messaging.channels.AMFChannel">
            <endpoint
url="http://{server.name}:{server.port}/{context.root}/messagebroker/amf";
class="flex.messaging.endpoints.AMFEndpoint"/>
            <properties>
                <polling-enabled>false</polling-enabled>
            </properties>
        </channel-definition>

deploying between servers then becomes pretty easy.
