That's just the standard application icon that you set in the app descriptor file, I believe. It normally works just fine for me in flex. Do you have no image there, or an incorrect one? (something to note, if you make a new application package with an updated icon and install it over the top of an old one, then the old icon will be shown on that second installer screen - in my experience at least. Run the new installer a second time to see the new icon as you would on a clean install)
