Any changes you make to an editable datagrid should be stored in the dataProvider. So if you assigned a piece of the Model to the DataGrid the changes should be there. Otherwise you'll want to capture changes from the cellEdit event and make updates appropriately.
You'll need to give more details of the problems you're encountering if it's a specific issue, otherwise those are some guidelines to get you started.
