I am actually working right now on coming up with the right sample applications that will help bring Flex to the larger development community. The idea is to produce not just the Restaurant example (which we'll keep and hopefully expand a little) but a number more just like it including one that's much bigger and can serve as a showcase. And all of those will be meant to run on entirely free systems (including the free version of FES).
I'll be sharing more and looking for feedback in the coming months.
