I don't know of anything built-in that provides this, but one way to accomplish it is to provide two fields in your data: one case- insensitive, the other case-sensitive. Set your grid column to the case-insenstiive field, then use a cell renderer or label function to have the grid display the case-sensitive field. Sorting on that column will then be case-insensitive.
