Yes, and 'are you kidding' :-)
Building a GUI with data binding in Flex in trivial, but requires much AJAX 
and HTML knowledge to do otherwise, even with something like Spry.

The latter, probably.

You don't need FDS, just ColdFusion 7.0.2, to invoke methods on the server,

ColdFusion or FDS ? Flex applications are just .swf files and don't need a 
server unless you need FDS features.

Welcome to the club.
Taking a few weeks out to learn Flex2/ActionScript is well worth it, IMVHO.
Later you'll be able to leverage these skills to build desktop apps (with 
Apollo) complete with temporarily-connected-network features.
