Found the answer,
Looks like the XML I had was not in a format that the Datagrid likes,
The format that worked is:
<employee>
<name>Christina Coenraets</name>
<phone>555-219-2270</phone>
<email>[EMAIL PROTECTED]</email>
<active>true</active>
</employee>
Instead of what I previously had:
<employee
name="Christina Coenraets"
phone="555-219-2270"
email="[EMAIL PROTECTED]
active="true />
