Take a look at amfphp.org, on the docs section, the part about class mapping explains it all.

If you´re using RemoteObjectAMF0, just take a look at the samples Renaun provides.

If you´re using CakePHP, you can also have your Cake models typemapped. There´s a TypeMapper written by Martin on cakeforge (for AS2) and I´m about to release the AS3 port of it.
