If you're using an ArrayCollection to populate your grid you could always edit/adjust or otherwise manipulate the data in your event handler. For instance, if you're using Web services, you can loop the data coming from the server and manipulate it as you add it into your ArrayCollection. Or, as suggested you can just use formatters to change *only* the display of specific columns w/o affecting the actual data.
