I've used Cold Fusion's built in xml tags for this, but also i've actually just created straight xml text and sent it back using a cfsavecontent to wrap the text and then the cfxml tag to create a valid document before I return it. It seems to work about the same either way as long as it's a small amount of data but it works much faster with the xml tags when there's lots of data.
