You can tear off some tabs, like say the "Variables" tab in the debugger, and move them to another window and resize them. Also in the Window menu you can create a whole new Eclipse window you can move to your second screen, where you can have a different perspective or move bits out of your "main" window.
In my experience these are the main ways of taking advantage of multiple monitors with Eclipse. Hope that helps!
