I've changed the default mouse bindings in $FG_ROOT/mice.xml to map buttons 3 and 4 (the 4th and 5th buttons) to control elevator trim in all mouse modes. Under X11, at least, this change makes the wheel on a regular three-button wheel mouse into a proper trim wheel -- if you're right-handed, the mouse wheel will even be close to the right place relative to your yoke or joystick (if you're left handed, pretend you're the flight instructor).
Note that you mouse wheel has to be working already under X11. I'd be interested in knowing if this binding works under Windows as well.
