I've added a --random-wind option to FlightGear to make it more interesting: it will give you a strong incentive to check the ATIS if you're at a big terminal, or to place a windsock at your favourite smaller field (you can always look in the property browser, of course).
The wind direction will be completely random. The wind speed will be from 0kt to 40kt, weighted towards the lower speeds on a backwards square-root curve (i.e. the speed will be 12kt or less 50% of the time). The gust is the base wind speed plus 0kt to 10kt, weighted in the same way towards the low end. You might want to consider putting --random-wind in your .fgfsrc if you would like each flight to be interesting.
