If you could get into the cockpit of the above aircrafts, you might want to get some 360 shots of the cockpit. It might also be worthwhile to bring a measuring tape along. :P For the exterior of the aircraft, you might want to pay more attentions to the rivets and take notes of how many frames/stations in the fuselage and wings. Frames usually have equal distance between one another, so they can serve as very good measuring devices. Finally, here is a thought that has been floating in my mind for a while, and I hope you could try it out: take some stereoscopic views of aircrafts. Having some stereoscopic photographs of an aircraft may help modellers make estimations better.
