FlightGear has a number of pretty simple/straightforward interfacing options. It's a holiday here in the USA so I can't spend much time online today (and probably not tomorrow either) but I and probably others would be more than happy to help you find a clean way to interface your stuff. FlightGear has been interfaced to a couple other physical cockpits so most if not all of the hooks you might need should be available.
