I have this working in Wiimote for pointing (rotating the head) and controls
(of the airplane),
but I am still lacking the spatial triangulation capabilities like this guy
demonstrated.

The software I wrote is called WiiFly (available on avsim.com) and it is a
joystick drivers
with 4 axes (2 for pointing, 2 for controls) and makes use of Wiimote and
Nunchuk
secondary controller (optionally). It can map up to 20 buttons using the
B-trigger on
the Wiimote as a "shift" key. I can provide the Flightgear joystick
configuration file
on request, as the software was originally written for MS FSX.
