I can give you the files needed for building the CVS version of FlightGear under Panther. I am currently building against the CVS version of plib, SimGear, and FlightGear. These are the files that I have which differ from CVS:

plib:
M src/js/js.h
M src/js/jsMacOSX.cxx

SimGear:
M simgear/metar/Local.h
M simgear/scene/material/matlib.cxx
M simgear/screen/extensions.hxx

Not all of these changes are safe for 10.1 or 10.2, and I don't have Darrell's speed improvement changes, either.

Let me know when you have plib brought down and I'll help you get things started.

p.s., I use fink so my destination directory is /sw. While fink isn't necessary with Panther, I would recommend installing it (http://fink.sourceforge.net/). Prior to Panther, fink was the best way to get the proper versions of autoconf and automake.
