I stumbled across this site which are building hardware that aims to
be compatible with Flightgear. (They have stated that they are not
interested in getting the hardware functional with

Could be worth following if you are wanting to build a cockpit or have
some physical controls/displays.

All firmware, drivers and other software is GPL (currently Linux only
though, they are happy to work with people to port the code to other
platforms.)
