Thank you to everyone for the suggestions! I think I will just go with Camtasia. I am currently using FlightGear as a visualization tool only. I set the flight model to "null" and have FlightGear read in the desired positions/attitudes of the aircraft from a file using the "generic" protocol (a very nice interface).
In order to ensure there is enough CPU time for both FlightGear and Camtasia, I set the flight model rate and read-from-the-input-file rate low, both to only 2 Hz. I am using Camtasia's "time-lapse capture" feature to capture frames at 2 per second and then create an avi file that plays back at 30 frames per second.
