You should find your FlightGear data directory, and then the Input, Joysticks and Logitech subdirectories off that. This latter contains the relevant XML file, in particular "extreme-3d-pro.xml" You should be able to open that in a text editor (simpletext sounds familiar to me, but I'm not a habitual Mac user so might be havering - just avoid using Word). If you read it, it should be fairly obvious how to modify it to do as you wish. If you need more help, then post here again, or perhaps even better, try the IRC channel for "real-time" help. The next release will have a very much improved version of fgjs which makes this sort of thing much easier.
