Have you flown any of the aircraft using a mouse with
auto-coordination invoked? Are you a capable pilot
and the aircraft behave well for you? If so then the
problem likely lies with the joystick and its
configuration.
Another suggestion is to bring up the HUD and watch
the rudder and aeileron indicators as you roll down
the runway and begin climbout. Regardless of which
method of control (mouse, keyboard, joystck) you
should be able to get most aircraft airborne and
tracking the extended centerline using only rudder.
Obviously one has to use some elevator to rotate and
become airborne at Vref/V2.
