Wikipedia has some material, although it's scattered, and sometimes
shallow.. almost name-dropping.

When I first got bitten by the simulator bug (before flightgear)
I hunted bookstores.  I came up with

The Illustrated Guide to Aerodynamics, H.C.Smith

Which is an understandable description, aimed at the
flyer (as opposed to the aeronautical engineer)

 From the Ground Up, (author unlisted, Aviation Publishers Co. Ltd., 
Ottawa)

Which seems to be a ground-school textbook intended for
flying students before they get to the plane.  It has
a lot of material on procedures, air-traffic control
and navigation, as well as basic descriptions of
the instruments and controls.

Both these books are now kind of old, and might not
be available outside Canada, but with luck you might
find something just as good.
