The pilot handles the plane from the inside, so cockpit details and procedures are of great value (and more hard work) too.
BTW, the videos reveal some technical details not seen in any drawing, like the extension time of the gear, or wingfold. Data on the roll rate of various aircraft is very scarsly available.
