I don't think that the shock waves would have made much noise - 
certainly not as much as the engines:)  Of course, if the aircraft 
had been supersonic then there would have been a 'boom' as the air 
rushed in to fill the hole bored by the aircraft.  Heh - if it had 
supersonic that close to the water we'd have probably seen the 
water surface actually being lifted up and not just disturbed too:)

I believe that the visual distortions we can see are due to the 
changing density of the air, caused by the shock waves, which 
affect it's refractive index - it's a similar effect to heat-haze 
shimmer.  That's the first time I've actually seen it caught on 
film though - or should that be ccd?
