I have this device but flightgear same to be incompatible with this 
device. But linux detect the device as:

I think isn't easy to map USB HID saitek device to flightgear!.

Perhaps you know a flightgear developper who interrest to work on kind 
of device.
I'm motived to collaborate for this kind of device supported on flightgear.
I have this device for testing ;)
