Do you have redundant paths from your router to your flow collector? If so, the export packets will have a source address of the "closest" interface to your collector at any given moment. If you lose a link and now prefer to reach your collector through a different router interface, your collector now thinks a new router is contacting it.

Even if you don't have redundant paths now, you'll probably want to add them later, and loopbacks are a Smart Choice(tm) for many other router tasks.
