FWIW, I just found these two related web pages:

The first link could be used to convert almost all "western" characters
(Windows CP-1252 + Mac Roman) to PostScript character names.

The second link contains "271 Unicode characters [that] are a minimum
repertoire that any modern Postscript printer driver receiving plaintext
should be able to render using the default Postscript fonts", together
with their Unicode values - and more links.

This could probably be a start...
