Have you tried asking on the nhibernate users<http://groups.google.com/group/nhusers/> mailing list? Your question is more about NH usage than the FNH mappings.
The short answer is that you can set up log4net to log to some sort of persistent storage such as a file or database. You then need to turn on the appropriate log level so that the sql generated by NH is persisted to the log. I'd try googling something like "nhibernate log4net sql".
