This book has a lot of knowledge. Gives you a lot of information on a lot of the parts of NHibernate.
At this point I wouldn't learn Fluent NHibernate. As of version3.0, NHibernate has its own mapping by code. A great resource for that is http://notherdev.blogspot.com/2012/02/nhibernates-mapping-by-code-summary.html It's a comprehensive dissection of all the mapping options open to you with the new mapping-by-code feature. it also gives you the analogous setup for Fluent NHibernate if you still want to pursue that route.
