I thought I'd answered this, but my reply seems not to have been posted.

The answer is that it isn't possible to do in FME 2006-GB or earlier,
but this funtionality will be in FME 2007 (and is in the current FME
2007 beta build).

Simply use Source Data > Update Feature Type Definitions on the menubar.
