I see what you're trying to do, but I personally wouldn't use FME for 
it. I think it would be very hard to get a nicely colored raster out of it.

You could export the 2D grid as shapefiles and import them in a package 
that can do 3D visualisation and analisys. My tools of choice would be 
either VNS (www.3dnature.com) or Manifold (www.manifold.net), but ESRI's 
  tools (I can never tell which version/extension does what...) will 
work just fine.

In that package, grid a DEM of the points, using the dB value as 
elevation and then color it by elevation. You could also create the DEM 
in FME by the way. Not sure which way is faster.
