What kind of features are they? I typically create features as I want them in a MapInfo file, and then use the FME Viewer to inspect them. Basically, you have to look at the values of the MapInfo format attributes (mapinfo_brush_foreground, etc), then in the workspace, expose these format attributes in the destination dataset, and use an AttributeCreator to make the attributes and set them to match your chosen values.
For simple things, like setting colours, the PenColorSetter and AreaFillColorSetter can be useful. Hmm. The new Ncolorer is neat too, but it would be nice to be able to choose between a few different palettes.
