I've been using the Change Printer plugin from Productive Computing for years with good results. The problem is, it appears that they've stopped developing and supporting it. According to their website the Windows version is only compatible with FMPro 6, while the Mac version is compatible with OS 7.6-10.3 and "NOT compatible with Universal Binary Intel Platform" then on another Line FileMaker Pro 6 only. If I remember correctly, I called and talked to them awhile back because their page showed it was compatible with FMPro 8, but not 7, or something weird like that. They've since removed that info completely.

What I DO know is that the 2.3.5 version DOES work with FMPro 6 on an Intel Mac because I'm using it on one. I'm in the 6-8.5 transition mode right now, but haven't had time to experiment with it on 8.5. You can download a trial version and see if it works, but even if it does, you're probably looking at a support deadend. Unfortunately, I haven't found another change printer plugin that works on the Mac. Anybody out there know of one?

What the h am I talking about? I guess I was thinking of tray options
and such. To switch printers in the middle of a script, you need a
3rd-party tool, like one of the plug-ins, or applescript on the mac
or FMTools if you are on windows.
