The two messages appende below are excerpts from an exchange on skin building 
and coating from the Baidarka mailing list (reproduced with the expressed 
permission of each author).

The debate on the pros and cons of polyester fabric (Dacron et al) compared 
to various types of nylon continues. This goes for coating also. Most would 
cure too hard for folding boat skins, but Hypalon and (liquid) neoprene are 
definitely viable options (again, see Peter Chopelas's North Alaska Retrieval 
Kayak adaptation for an example using Hypalon).

The Baidarka ML archives are a treasure trove, too.

We've got the main seam sewed on both the front and the rear decks, and 
sewing around the cockpit coaming is 95% completed too.  As I've mentioned, 
we've been misting the nylon and sewing it snug but not overly tight while 
damp, and then it shrinks to near perfect (whatever that is) tightness when 
it drys. I keep the kayak in my heated garage. While I was gone for a few 
days the garage wasnt heated, and the skin was a bit sloppy when I returned. 
I was surprised at the difference. Its nice and tight again, now that the 
garage is heated again. Probably one or two more evenings and it should be 
ready for sealing-all we have to do is sew down the flaps along the deck and 
touch up a few spots.

I presume when I start coating it with polyurethane (I plan to use water 
based), that the skin will loosen a bit when its applied. Will it reshrink 
again as the poly dries, or will the drying polyurethane "fix" it in the 
looser position? Or is it all a mystery?
