Ellen - the program thinks you are addressing an envelope for a particular letter only, that's why it thinks its job is done when it prints one.
If you don't use the 'envelope' setting in a word document, but instead use a separate word document which you happen to print out on an envelope, you should be able to print as many as you want. Incidentally,depending on the printer, sometimes its better to print envelopes in 'landscape' format, with the text at the bottom of the page, rather than in portrait, to be sure the printing is straight, but your printer may handle envelopes easily either way.
