I used TeX, but long time ago, for mathematics and physics. Lot of people do not understand TeX, it is very powerful program. Correct question for Mister Alessandro is: Does OpenType font DejaVu works in XeTeX ? As I remember, he use Adobe Minion and Myriad OpenType fonts, so generally all OpenType fonts are ready for XeTeX, right ? PDF file he attach is produced by xdvipdfmx 0.7.8, so this program must be checked also for compatibility. It is also known ( from my own experience ) that some pdf producers can not handle some fonts, for example when you convert some documents with free URW++ PS Type 1 Cyrillic fonts ( with Serbian Glyphs ), pdf file is without Serbian Glyphs.
