I think the way to do this is to create an <fo:block id="EOF"/> tag at the
end of the page sequence (inside the flow), then use page citation to get
the value of the last page number i.e <fo:page-number-citation
ref-id="EOF"/>

Is it possible to indicate the total page number of the document, e.g. for
