Without searching on the web an easy example:
Place this in the Page-sequence on the top of your source.
<!-- Setting Page numbers -->
<fo:static-content flow-name="xsl-region-after">
<fo:block text-align="center">
page <fo:page-number/> of <fo:page-number-citation ref-id="endofdoc"/>
</fo:block>
</fo:static-content>
and put this at the end of your source.
<fo:block id="endofdoc"></fo:block>
