After having consulted the Debian reproducible-builds crew, it appears that 
your suggestion to skip lines during binary diff of pdf files is a no-go.

So I wonder if you have any idea of how to direct FOP to fill-in the metadata 
with a manually-set value? That could be a non-default option, for example.
