Does anyone just have a comprehensive description about such writing
analyzes and how they work?

Guess one method is counting used words with dictionary (looks like
what unmask does).

But are methods used by cryptoanalysis (counting frequency of single
and paired tokens, eg. "en", for assumed language) used by this program
or other software, too? 

Or is it more conveniently to use dictionary only?
