The essence of foss is not to substitute Microsoft or any other
company...
Free software movement is something bigger...
But then, linux is not a magic wand to wipe off all the problems from
the face of earth....

However, if you want to switch to GNU/Linux and are afraid if or not
the programs that you have been using in your Windows computer will
still be available to you, then the best suggestion I can give you is
not to loose hope. First of all, all the products that you mentioned
above aren't directly available in GNU/Linux. But, their alternatives
for GNU/Linux exist, eg:

Adobe Photoshop => GIMP
PDF Viewer => Evince
Macromedia DreamWeaver => Quanta
Microsoft Office => Open Office

and many more, in fact...

The main reason for all softwares not being directly available in GNU/
Linux is because the companies distributing them havent distributed a
GNU/Linux version of their softwares. The free software development
community has been releasing many of the softwares (like those
mentioned above) that are sometimes similar, if not better than their
Windows counterpart. If users like you and I start using more of such
free programs and encouraging the developers, in the future, full
flegded versions of such softwares for GNU/Linux distributions will be
released, lets hope...

To add to this,
there are many emulators available for GNU/Linux, which can very well
emulate many of the programs made for Windows.
One good and popular example is WINE (Wine Is Not an Emulator :P, a
free software) http://www.winehq.com/
The list of applications supported are frequently updated on the WINE
App database at: http://appdb.winehq.org/
Another place where you can get help about running Windows programs on
GNU/Linux : http://frankscorner.org/index.php
If you are specifically looking for playing Windows games on GNU/
Linux, Cedega will be worth trying. (This was what help me make nearly
Windows independent :P) http://games.cedega.com/gamesdb/

Cheers!
