I think better way to start learning about the core concepts about the operating system starts from small operating systems. Please consider looking at ManRIx(www.manrix.sf.net) OS. This OS was developed in NCIT College as a student project by two students namely Manish Regmi and Rajesh R.C. This is a small operating system purely written in C and Assembly.
