Does anyone have any recommendations on a good open source packet
capture suite with sFlow? I'll start to search now.

As I recall, sFlow collection and export is not supported on Ironcore
series hardware.
The device will still accept the command, because the feature is
present in the software, but there's no hardware ability to do the
sampling.
Of course, the lack of error-reporting will throw you too.
